Apple Crisp Cheesecake Bars Recipe

We went apple picking this weekend and I had to make something with all the apples.

This was by far my favorite! These are so yummy and totally scream fall.



Apple Layer Ingredients:

3 medium Apples

2 Tablespoons Sugar

3/4 teaspoons Cinnamon

A Pinch of Nutmeg


Cheesecake Ingredients:

16oz Cream Cheese (at room temperature)

1/4 cup Sugar

1/3 cup Brown Sugar

2 Eggs

1 Tablespoon Vanilla Extract


Crisp Topping Ingredients:

1/2 cup Flour

3/4 cup Brown Sugar

1/2 teaspoon Salt

1 teaspoon Cinnamon

6 Tablespoons Butter (Cold, Cubed)

1/2 cup Rolled Oats


Crust Ingredients:

8oz Butter (at room temperature)

3/4 cup Brown Sugar

1/2 teaspoon Salt

1 teaspoon Vanilla Extract

2 cups Flour


 

Crust Directions:

Preheat oven to 325°.

Line a 9x13 pan with parchment paper, and spray with non-stick spray.

Mix Butter and Sugar until fluffy.

Add in Vanilla Extract.

Add Flour and Salt.

Put Crust in pan, and bake for 20 minutes.

Remove from oven and let cool.


Cheesecake Layer Directions:

Preheat oven temperature to 350°.

In a bowl, mix Cream Cheese and Sugar.

Add Eggs, one at a time, with the Vanilla Extract.

Once Crust is cooled down, pour the Cheesecake mix on top of the Crust.


Apple Layer Directions:

Core and chop Apples - make sure to cut them all the same size.

Mix Apples, Sugar, Cinnamon, and Nutmeg together.

Top the Cheesecake layer with Apple mixture.


Crisp Layer Directions:

Add Flour, Brown Sugar, Salt, Cinnamon, and Rolled Oats into a food processor.

Pulse a few times until everything's mixed together.

Add cold Butter in.

Pulse until Butter is in small kernel-sized pieces.

Top the Apple layer with Crisp mixture.

Put in the oven at 350° for 35 minutes.

Remove from oven, and let it cool down to room temperature.

Once room temperature, chill it in the fridge for a few hours.

Once chilled, cut, and store in an air-tight container.
